Flavours and Nutrition
Speciality plants: an expression of historic know-know
From each variety of its specialty plants, Herbarom creates a range of different ingredients, and thus a very broad palette of flavours to support the creative work of flavourists.
Carrots: a complete range of essential oils derived from varietal selection Carrots (Latin name: Daucus carota L) are widely used in cooking and as a food flavouring, but they are also used in cosmetics, perfumery, nutraceuticals and aromatherapy.
Herbarom’s expertise in carrots is based on varietal selection in order to obtain an ideal quality and a stable chemotype.
For the flavourings and foods market, Herbarom has selected specific varieties in order to obtain, from the steam-distilled seeds, essential oils in which each aromatic profile meets the specific needs of its customers. For example, depending on the reference chosen, their notes may be more or less terpenic, fruity or resinous, as well as adding other flavour nuances.
Parsley: more than 25 years of experience in the development of specific qualities and mixtures.
Made from the seeds of parsley (Petroselinum crispum (Mill.) Fuss) harvested in summertime, Herbarom proposes essential oils obtained by steam distillation.
Thanks to its expertise in seed selection, gentle extraction processes, aromatic maturation and blending, Herbarom is able to create the flavour profiles sought by its customers. France essential oil of parsley, for example, has dominant herbal, green, metallic, woody and terpenic notes.
Lovage: the know-how of a pioneer in root extraction
Lovage (Levisticum officinalis), sometimes called smellage or Maggi herb, is a historic plant for Herbarom, particularly well known for its liver-protecting properties.
Drawing on more than 25 years of experience in the processing of lovage – leaves and roots – and long-term partnerships with growers, Herbarom has real know-how in optimising root drying and extraction to give the best dried matter yield.
Herbarom obtains several ingredients from lovage root and its gentle distillation process:
– Essential oil of lovage: very high ligustilide content. From a flavour point of view, this ingredient delivers dominant earthy notes of earth, walnut, celery, spice and fenugreek.
– Absolute: rich in natural fatty acids, this is an interesting extract with strong celery, herbal and earthy notes.
– Aromatic substances: 100% natural, they can be adapted depending on the quality required by the customer and reveal celery, herbal, green, woody and terpenic notes.
These natural ingredients are a real asset when it comes to creating food flavours that deliver a specific and sufficiently intense aromatic profile.
