Controlled process management produces a granulated pea extrudate with a slightly fibrous structure and precisely defined properties. Lory® Tex Granules stand out for their light color and near-neutral flavor profile – characteristics that are far from standard in pea-based plant proteins – and support simple seasoning and product development. The extrudate delivers a protein content of more than 65 percent alongside a dietary fiber content of 5.6g per 100g. Its high water-binding capacity allows the desired texture in the finished product to be achieved with lower inclusion rates – simplifying recipes and improving efficiency in the manufacturing process.
