iba 2025: RAPS presents innovative ingredients for tailor-made baked goods

iba 2025, Hall 15, Stand G23: Microencapsulated ingredients and high-quality savoury fillings bring functionality and flavour to the fore

Under the motto ‘Bake the world a little better’, ingredient and spice expert RAPS will present its versatile solutions for the bakery industry at the international bakery trade fair iba, taking place in Düsseldorf from May 18-22.  The focus will be on the company’s functional coating technologies as well as fillings and toppings in a variety of savoury flavours.

The bakery industry is looking for ever-more efficient solutions. RAPS supports manufacturers and bakery chains across the board: its functional ingredients and ready-to-use solutions can be added to dough, fillings and toppings. At iba, the company will be demonstrating how its product innovations support optimal functionality and flavour in baked goods and snacks.

Microencapsulation for optimal quality and process stability

RAPS relies on its pioneering microencapsulation method: with the Coatec process, functional core materials are coated with a protective layer and protected from external influences such as temperature, moisture and oxidation. In addition, the coating technology enables targeted and time-controlled release of the ingredient. In baked goods, the microencapsulation of acids and carbonates is critical for high quality and process stability. Coating technology also enables manufacturers to improve dough properties, avoid uncontrolled reactions with other components and achieve a longer shelf life for tortillas, toast and other baked goods.

Savoury fillings for all tastes

For the right flavour, RAPS offers savoury fillings and toppings based on vegetables, herbs, meat, fish or dairy products, including vegan. For filled pastries such as dumplings, manufacturers can use sprinkleable seasonings and binders that only need to be mixed with a cream cheese or quark base to create a filling that is stable when baked. The company already offers ready-made freeze, thaw and bake-stable fillings under its Fresh Line range.

Visitors to the RAPS stand will be able to sample a selection of flavour creations – including traditionally inspired fillings such as ‘Tomatino Pepperito’, ‘Tzatziki’ or ‘Bacon Onion’, as well as trendy new products such as ‘Korean BBQ’ and ‘Kebab’. RAPS also presents the Magic Bakery range for enhanced taste and appearance of bread specialities.
