NotCo AI founder Matías Muchnick to discuss AI-Powered R&D and ingredient substitution at Fi Europe

Matías Muchnick, founder and CEO of NotCo AI, will join two sessions at Fi Europe exploring how artificial intelligence is changing food product development and helping manufacturers respond to increasingly complex formulation challenges.

On Tuesday, November 17, from 4:40–5:05 p.m. at the Fi Conference Theatre, Muchnick will present “The End of the Ingredient Guessing Game: How AI-Powered R&D Is Transforming Food Innovation.”

While much of the AI conversation has focused on software, Muchnick will examine its potential to transform physical product development. The session will explore how AI can help companies model ingredient behavior, formulations and sensory attributes before physical testing, allowing R&D teams to conduct more informed experiments and accelerate innovation.

Drawing on examples involving commodity shortages and emerging health needs, Muchnick will also discuss how data-driven formulation workflows can support ingredient discovery, reformulation and speed to market amid climate volatility and resource scarcity.

On Wednesday, November 18, from 3:30–4:10 p.m., Muchnick will participate in the panel “Can We Really Replace It? Engineering Ingredient Substitution in Complex Food Systems.”

The discussion will examine why replacing cocoa, sugar, palm oil, proteins and other ingredients is rarely a straightforward one-for-one swap. Panelists will consider how ingredient changes affect texture, flavor, stability, shelf life and processing simultaneously, as well as the trade-offs between health, sensory performance, cost and supply resilience.

Both sessions will take place at the Fi Conference Theatre, stand 30A94
